  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 2 tsp dried oregano
  • 1/4 cup extra virgin olive oil
  • 1 medium cucumber, diced (about 1 cup)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Place chicken in a resealable bag or shallow dish; pour marinade over chicken and let marinate for at least 30 minutes (up to overnight).
  3. Preheat grill or skillet over medium-high heat. Remove chicken from marinade and discard leftover marinade.
  4. Grill or pan-sear chicken for about 6-7 minutes per side until fully cooked (internal temperature should reach 165°F).
  5. While chicken cooks, prepare cucumbers and cherry tomatoes.
  6. Once chicken has rested for a few minutes, slice into strips.
  7. In bowls, layer rice or quinoa, veggies, sliced chicken, crumbled feta cheese, and drizzle with olive oil.
