Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season chicken thighs with salt and pepper. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1 minute).
  3. Add chicken thighs, skin-side down, and brown for about 5 minutes per side.
  4. Transfer chicken to the baking dish with potatoes. Deglaze the skillet with white wine and chicken broth; pour over the chicken and potatoes.
  5. Sprinkle oregano on top. Cover with aluminum foil and bake for 40 minutes; remove foil and bake an additional 15 minutes until golden brown.
