  • 2 large eggs, beaten
  • 1/4 cup pine nuts (optional), toasted

Instructions

  1. Rinse wild rice under cold water until clear. Cook in a saucepan with vegetable broth over medium heat: bring to a boil, then simmer covered for 40-50 minutes until tender.
  2. In a skillet, melt butter and sauté diced onion and celery for 5-7 minutes until softened. Stir in chopped chestnuts and sage; cook for an additional 3-4 minutes.
  3. In a large bowl, mix cooked wild rice with the sautéed mixture and beaten eggs until well combined.
  4. Preheat oven to 375°F (190°C). Grease a muffin tin and fill each cup with about 1/4 cup of the mixture. Press down slightly.
