  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup Greek yogurt (full-fat)
  • 1/2 cup grated cucumber (squeezed dry)
  • 2 tbsp fresh dill or mint (chopped)
  • 1 clove garlic (minced)

Instructions

  1. In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper to create the marinade.
  2. Cut chicken breasts into cubes and coat them in the marinade. Cover and refrigerate for at least 30 minutes.
  3. While the chicken marinates, combine Greek yogurt, grated cucumber, minced garlic, dill or mint, and additional lemon juice in another bowl to prepare the tzatziki sauce.
  4. Thread marinated chicken onto skewers (4-5 pieces each) with spaces in between for even cooking.
  5. Preheat the grill to medium-high heat and grill skewers for about 10-12 minutes until cooked through, flipping halfway for even browning.
  6. Serve hot with tzatziki sauce on the side.
