Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.
  2. Add diced bell peppers and green beans; cook for about 5 minutes until slightly softened.
  3. Mix in canned tomatoes, saffron threads, and smoked paprika. Cook for another 3 minutes until fragrant.
  4. Stir in the rice until coated with the mixture, then pour in vegetable broth and season with salt and pepper. Bring to a boil, then reduce heat to simmer gently.
  5. Cover loosely with a lid or foil and simmer for 20-25 minutes until rice absorbs liquid and becomes tender (do not stir during cooking).
  6. Once cooked, remove from heat and let it rest for 5 minutes covered. Serve with fresh lemon wedges on top.
