  • 1 cup bell peppers (diced, mixed colors)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh herbs (like cilantro or parsley, chopped)

Instructions

  1. Press the tofu for about 15 minutes to remove excess moisture.
  2. Heat olive oil in a skillet over medium heat. Sauté the chopped onion until translucent (about 5 minutes).
  3. Add diced bell peppers and minced garlic; cook for an additional 3-4 minutes until softened.
  4. Crumble the pressed tofu into the skillet, then add turmeric, cumin, salt, and pepper. Mix well to coat the tofu.
  5. Cook for another 5-7 minutes until heated through and flavors meld together.
  6. Stir in fresh herbs just before serving.
