Ingredients

Scale
  • 2 salmon fillets (6 oz each)
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp vegetable oil
  • 1 cup jasmine rice
  • 1 cup mixed vegetables (broccoli, bell peppers)

Instructions

  1. Rinse jasmine rice under cold water until clear; cook according to package instructions (about 15 minutes).
  2. In a bowl, whisk together soy sauce, brown sugar, minced garlic, and grated ginger to create the teriyaki sauce.
  3. Heat vegetable oil in a skillet over medium-high heat. Sear salmon fillets skin-side down for 4-5 minutes until crispy; flip and pour teriyaki sauce over them. Simmer for an additional 3-4 minutes until the sauce thickens.
  4. In another pan, sauté mixed vegetables in a drizzle of oil for about 5 minutes until tender.
  5. Assemble bowls by layering rice at the bottom, topping with salmon and sautéed veggies. Drizzle extra teriyaki sauce on top if desired.
