  • 2 medium sweet potatoes (about 400g)
  • 2 ripe avocados
  • 1 cup cherry tomatoes (150g)
  • 1/2 cup crumbled feta cheese (75g)
  • 2 tbsp extra virgin olive oil (30ml)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Wash and peel the sweet potatoes, then slice them into 1/4-inch thick pieces.
  2. Arrange the slices on a parchment-lined baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 20-25 minutes until tender and golden brown.
  3. Remove from the oven and let cool slightly. Top each slice evenly with smashed avocado.
  4. Add halved cherry tomatoes and crumbled feta cheese on top of the avocado.
  5. Garnish with chili flakes or fresh herbs if desired. Serve immediately while warm.
