  • 2 cups fresh strawberries, sliced
  • 1 cup mascarpone cheese, room temperature
  • 1 cup savoiardi biscuits (ladyfingers)
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup brewed coffee or espresso
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Wash and slice the strawberries. If they're not very sweet, sprinkle with a little sugar.
  2. In a bowl, mix the mascarpone cheese with sugar until smooth. Stir in vanilla extract.
  3. Dip each ladyfinger briefly into the coffee and layer them in a rectangular dish.
  4. Spread half of the mascarpone mixture over the ladyfingers, then add half of the sliced strawberries.
  5. Repeat layering with remaining ladyfingers, mascarpone mix, and strawberries.
  6. Chill for at least four hours or overnight. Dust with cocoa powder before serving.
