  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 cup fresh strawberries, pureed

Instructions

  1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs, melted butter, and ¼ cup sugar in a bowl. Press firmly into the bottom of a springform pan.
  2. In a separate bowl, beat cream cheese until smooth. Gradually add remaining sugar and mix until fully incorporated.
  3. Add sour cream and mix until smooth. Beat in eggs one at a time and then add vanilla extract.
  4. Fold half of the pureed strawberries into half of the cheesecake batter to create swirls.
  5. Pour half of plain batter into the crust, layer with strawberry batter, then top with remaining plain batter. Gently swirl with a knife.
  6. Bake for about 60 minutes or until edges are set but center is slightly jiggly. Cool completely at room temperature before refrigerating for at least four hours.
  7. Serve chilled, garnished with fresh strawberries.
