  • 1 cup pineapple juice (freshly squeezed or canned)
  • 1/2 cup white miso paste
  • 1/2 cup light brown sugar
  • 1 tbsp fresh ginger (grated)
  • 1/4 cup low-sodium soy sauce
  • 4 garlic cloves (minced)
  • Optional: Pineapple rings for garnish

Instructions

  1. Preheat the oven to 325°F (163°C). Line a roasting pan with aluminum foil.
  2. Score the surface of the ham in a diamond pattern.
  3. In a bowl, combine pineapple juice, miso paste, brown sugar, garlic, ginger, and soy sauce. Whisk until smooth.
  4. Brush half of the glaze over the ham and cover loosely with foil. Bake for 1.5 hours.
  5. Remove foil, brush on remaining glaze, and add pineapple rings if desired. Bake uncovered for an additional 30 minutes.
  6. Let rest for 15 minutes before carving and serving.
