  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Rinse rice under cold water until clear. In a pot, combine rice with 2 cups of water, bring to a boil, cover, and simmer for approximately 18 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add onion and bell peppers; sauté for 5-7 minutes until softened.
  3. Stir in cubed sweet potatoes and cook for an additional 10 minutes or until tender. Season with salt and pepper.
  4. Push veggies aside, add ground beef to the skillet, breaking it apart as it cooks for about 6-8 minutes until browned. Drain excess fat if needed.
  5. Mix in spices (cumin, paprika, chili powder), cooking for another 2-3 minutes until fragrant.
  6. To serve, layer cooked rice in bowls topped with the spiced beef and sweet potato mixture.
