Instructions

  1. Boil salted water in a large pot, add spaghetti, and cook until al dente (8-10 minutes). Reserve 1/2 cup of pasta water before draining.
  2. Heat olive oil in a skillet over medium heat, then add minced garlic and sauté until fragrant (about 1 minute).
  3. Stir in fresh spinach and cook until wilted (around 3 minutes).
  4. Add drained spaghetti to the skillet with spinach and garlic. If needed, pour in reserved pasta water to create a light sauce. Toss to combine thoroughly.
  5. Sprinkle with red pepper flakes, salt, and pepper. Plate while warm.
  6. Top with grated Parmesan cheese before serving.
