  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tbsp Dijon mustard

Instructions

  1. Chop all vegetables: dice onions and bell peppers, and slice mushrooms.
  2. Heat oil in a skillet over medium heat. Sear each chicken breast for 3-4 minutes per side until golden brown.
  3. Remove chicken and add onions and garlic to the skillet; sauté until fragrant.
  4. Place the seared chicken back into the slow cooker with the sautéed vegetables, chicken broth, Dijon mustard, salt, pepper, and paprika. Stir well.
  5. Cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  6. About 30 minutes before serving, stir in heavy cream to create a luscious sauce.
