  • 9 oven-ready lasagna noodles
  • 1 lb medium shrimp, peeled and deveined
  • 15 oz ricotta cheese (whole milk)
  • 3 cups shredded mozzarella cheese (part-skim)
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 2 cups fresh spinach
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a saucepan over medium heat, melt butter and sauté garlic until fragrant. Whisk in heavy cream and Parmesan until smooth; set aside.
  3. Sauté shrimp in olive oil over medium heat until pink, seasoning with Italian seasoning.
  4. In the baking dish, layer white sauce, noodles, ricotta dollops, shrimp, spinach, and mozzarella. Repeat layers finishing with mozzarella on top.
  5. Cover with foil (avoid touching cheese) and bake for 30 minutes. Remove foil for the last 10 minutes until bubbly and golden.
  6. Let cool for five minutes before slicing and serving.
