  3. In another bowl, mix sugar and vegetable oil until combined. Add buttermilk, eggs, food coloring, vinegar, and vanilla; stir until smooth.
  4. Gradually combine dry ingredients with wet ingredients; mix until just combined.
  5. Pour batter evenly into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool before frosting with the cream cheese mixture blended with butter and powdered sugar.
