  • 1/4 cup panko breadcrumbs
  • Salt, pepper, and nutmeg to taste

Instructions

  1. Cook elbow macaroni in boiling salted water until al dente (7-8 minutes). Drain and set aside.
  2. In a saucepan, melt butter over medium heat and stir in an equal amount of flour to create a roux; cook until golden brown (1-2 minutes).
  3. Gradually whisk in milk followed by pumpkin puree, seasoning with salt, pepper, and nutmeg; cook until slightly thickened.
  4. Reduce heat to low and stir in cheddar and Gruyère until melted and creamy.
