Pozole Rojo

Pozole Rojo is a hearty Mexican soup that brings warmth and vibrant flavors to your table. This comforting dish features tender pork shoulder, aromatic spices, and rich guajillo chiles, all simmered to perfection. With fresh toppings like radishes and avocado, each bowl offers an explosion of taste that’s perfect for family gatherings or cozy nights in.

  • 2 lbs pork shoulder, cut into cubes
  • 4 dried guajillo chiles, stems and seeds removed
  • 2 cups hominy (canned or dried)
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp Mexican oregano
  • 2 tbsp fresh lime juice
  • Toppings: sliced radishes, shredded lettuce, diced avocado

Instructions

  1. Prepare the chiles by rinsing them under cool water. Soak in hot water for about 15 minutes until softened.
  2. In a large pot, add the pork shoulder with enough water to cover. Sprinkle with salt and boil, then reduce heat to simmer until tender (about 2 hours).
  3. Blend the soaked chiles with some cooking liquid until smooth.
  4. Add hominy and the blended chile sauce to the pot with pork. Simmer for another 30-40 minutes.
  5. Serve hot in bowls, garnished with radishes, lettuce, avocado, and a squeeze of lime juice.
