  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup pistachios, roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a bowl, mix the softened butter with granulated sugar, brown sugar, and cocoa powder until smooth. Add eggs one at a time, incorporating half of the flour and baking powder until just combined.
  3. In another bowl, cream together the remaining butter with sugars until fluffy. Mix in the last egg and gradually add the rest of the flour, then fold in chopped pistachios.
  4. Pour half of the brownie batter into the prepared pan. Dollop cookie dough on top followed by the remaining brownie batter.
  5. Bake for 25-30 minutes or until a toothpick comes out clean with some gooey crumbs.
