  • 8 taco shells (soft or crunchy)

Instructions

  1. Trim excess fat from the pork shoulder and season with salt and pepper.
  2. Heat oil in a skillet over medium-high heat. Sear the pork on all sides until browned, about 4-5 minutes per side.
  3. In a slow cooker, combine seared pork with diced onion, minced garlic, brown sugar, cumin, chopped habaneros, and pineapple. Mix well.
  4. Cover and cook on low for 8 hours or until the pork is tender enough to shred.
  5. Remove the pork from the slow cooker and shred it in a large bowl. Mix in some cooking liquid to keep it moist.
  6. Warm taco shells as instructed and fill them with pulled pork mixture. Top with fresh cilantro and lime juice if desired.
