Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz penne pasta
  • 2 cups marinara sauce
  • 8 oz fresh mozzarella cheese, shredded
  • ½ cup grated Parmesan cheese
  • 1 cup fresh basil leaves
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper and sear until golden brown, about 5-7 minutes per side or until they reach an internal temperature of 165°F (75°C). Remove from pan.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the marinara sauce and stir.
  3. Add penne pasta and enough water to cover the pasta by one inch. Bring to a boil then reduce heat to simmer for 10-12 minutes until pasta is al dente.
  4. Stir in mozzarella and Parmesan cheese until melted, about 3-4 minutes. Fold in fresh basil right before serving.
