Instructions

  3. In another bowl, cream butter with granulated and brown sugars until fluffy. Add egg and vanilla; mix well.
  4. Gradually combine dry ingredients with wet mixture until just mixed.
  5. Drop tablespoon-sized dough onto parchment-lined sheets, spacing them two inches apart.
  6. Bake for 10-12 minutes until edges are golden but centers remain soft. Cool on wire racks.
  7. For the filling, beat together butter and powdered sugar until smooth; add vanilla and mix until fluffy.
  8. Assemble by spreading frosting between two cooled cookies.
