  • 1/2 cup gin
  • 1/2 cup sweet vermouth
  • 1/4 cup Campari
  • 2 tbsp honey
  • 4 sprigs fresh rosemary
  • 6 garlic cloves, whole
  • Zest of 1 lemon
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. In a bowl, mix salt, pepper, and olive oil; rub all over the chicken.
  4. Combine gin, sweet vermouth, Campari, honey, rosemary, garlic, and lemon zest in another bowl to create the marinade.
  5. Pour half of the marinade over the chicken in a roasting pan; save the rest for basting.
  6. Roast for about 1 hour or until golden brown and crispy.
  7. Baste with remaining marinade every 15 minutes during cooking.
  8. Let rest for 10 minutes before carving and serving.
