  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp taco seasoning
  • 1 can black beans (15 oz), rinsed and drained
  • 1 cup sweet corn (fresh or frozen)
  • 1 can diced tomatoes (15 oz)
  • 2 cups shredded cheese (Cheddar or Monterey Jack)
  • 1 cup crushed tortilla chips

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a large bowl, coat the chicken breasts with taco seasoning.
  3. Layer the seasoned chicken at the bottom of the prepared dish. Top with black beans, corn, diced tomatoes, and half of the shredded cheese.
  4. Add crushed tortilla chips on top followed by the remaining cheese.
  5. Bake for 30-35 minutes until heated through and bubbly.
  6. Allow to cool for a few minutes before serving. Garnish as desired.
