  • 1/4 cup white miso paste
  • 1/4 cup pure maple syrup
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp grated fresh ginger
  • 2 tbsp lime juice
  • 1 head radicchio, cut into wedges
  • 2 tbsp olive oil
  • 2 tbsp toasted sesame seeds
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together miso paste, maple syrup, soy sauce, ginger, and lime juice until smooth.
  2. Place salmon fillets in a shallow dish and pour half the marinade over them. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Preheat oven to 400°F (200°C). Slice radicchio into wedges, drizzle with olive oil, salt, and pepper; arrange on a baking sheet lined with parchment paper.
  4. Roast radicchio for about 20 minutes until tender and slightly charred. Meanwhile, place marinated salmon skin-side down on another baking sheet lined with foil; bake for 12-15 minutes until cooked through.
  5. Drizzle remaining marinade over the salmon before serving and sprinkle with sesame seeds.
