  • 4 cups fresh spinach, chopped
  • 2 cups cheese tortellini (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Italian herbs (dried oregano and basil)
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package instructions in a large pot of salted boiling water until tender. Drain and set aside.
  2. While the tortellini cooks, rinse spinach and chop coarsely if desired. Halve cherry tomatoes, dice cucumber, and thinly slice red onion.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, Italian herbs, salt, and pepper.
  4. In a large bowl, combine cooked tortellini with spinach, tomatoes, cucumber, onion, and feta cheese. Pour dressing over the salad and gently toss to coat evenly.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
