  • 6 digestive biscuits or ladyfingers, crushed
  • 3 tbsp unsalted butter, melted

Instructions

  1. Prepare the base by mixing crushed biscuits with melted butter until it resembles wet sand. Press firmly into the bottom of a serving dish.
  2. In a bowl, combine mascarpone cheese, sugar, lemon juice, and Limoncello. Stir until smooth.
  3. In another bowl, whip the cream until stiff peaks form. Gently fold it into the lemon mixture.
  4. Spread half of the lemon cream over the biscuit base, add more crushed biscuits if desired, then top with remaining cream.
  5. Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld.
