  • 1/2 cup granulated sugar (for crust)
  • 1/2 cup unsalted butter (cold, cubed)
  • 2 large eggs
  • 1 cup fresh lemon juice (about 3 lemons)
  • Zest of 2 lemons
  • 1 cup granulated sugar (for filling)
  • 2 tbsp all-purpose flour (for filling)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a bowl, mix together 1 cup flour, 1/2 cup granulated sugar, and cold butter until crumbly. Press into the bottom of the baking dish and bake for 20 minutes until lightly golden.
  3. While the crust bakes, whisk together 2 eggs in a large bowl until frothy. Add lemon juice, lemon zest, 1 cup granulated sugar, and 2 tbsp flour; mix until smooth.
  4. Pour the lemon filling over the baked crust and return to the oven for another 20-25 minutes until set but slightly jiggly in the center.
  5. Allow to cool completely in the pan before transferring to a cutting board. Dust with powdered sugar before serving.
