  • 2 lbs lamb shoulder, diced
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh mint, chopped
  • 1/2 cup fresh dill, chopped
  • 4 tbsp extra virgin olive oil
  • 2 sheets puff pastry, thawed
  • 4 cloves garlic, minced
  • 1 large onion, finely chopped
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a heavy pot over medium heat. Sauté the onions and garlic until golden.
  2. Add the diced lamb shoulder and spices; cook until browned.
  3. Stir in the fresh herbs off the heat.
  4. Roll out puff pastry on a floured surface and cut into squares.
  5. Place the filling in the center of each square, fold over, and seal edges.
  6. Preheat oven to 400°F (200°C). Brush pastries with beaten egg and bake for 25-30 minutes until golden brown.
