  • 1 whole chicken (34 pounds)
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp sesame oil
  • 6 cloves fresh garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 2 green onions (chopped for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a rotisserie spit or roasting pan.
  2. In a bowl, whisk together soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger until smooth.
  3. Place the chicken in a resealable bag or bowl and pour the marinade over it. Seal tightly and refrigerate for at least 1 hour (overnight is best).
  4. Remove the chicken from marinade (reserve some), pat dry with paper towels, and place on the rotisserie spit or in the roasting pan. Pour reserved marinade on top.
  5. Roast in the oven for about 1 hour and 15 minutes or until the internal temperature reaches at least 165°F (75°C), basting with remaining marinade halfway through.
  6. Let the chicken rest for 10 minutes before carving and serving garnished with green onions.
