King Arthur’s Carrot Cake

  • 4 large eggs
  • 3 cups grated carrots (about 5 medium carrots)
  • 1 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round 9-inch cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix oil and eggs until combined. Stir in grated carrots and nuts if using.
  4. Fold the wet mixture into the dry ingredients until just combined; lumps are okay!
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely. Frost with cream cheese frosting once cooled.
