  • 1/4 cup almond flour
  • 1 large egg
  • 1 tbsp fresh parsley (chopped)
  • 1/2 cup sour cream
  • 1 cup low-sodium beef broth
  • 8 oz mushrooms (sliced)
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix ground beef, almond flour, egg, parsley, onion powder, salt, and pepper until well combined.
  3. Roll the mixture into golf ball-sized meatballs and place them on the baking sheet.
  4. Bake for about 20 minutes until golden brown and cooked through.
  5. While meatballs bake, sauté sliced mushrooms in a skillet over medium heat until tender.
  6. Add beef broth to the skillet and bring to a simmer; stir in sour cream until smooth.
  7. Transfer baked meatballs to the skillet and let simmer for another 5 minutes before serving.
