Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/4 cup low-sodium soy sauce
  • 1 cup vegetable oil (for frying)
  • 1/2 cup ketchup (for sauce)
  • 2 tbsp Worcestershire sauce (for sauce)

Instructions

  1. Prepare the chicken by placing breasts between plastic wrap and pounding to half-inch thickness. Season with salt and pepper.
  2. Set up a breading station: beat eggs in one bowl and place panko in another.
  3. Coat each chicken breast in egg, then dredge in panko, pressing lightly to adhere.
  4. Heat vegetable oil in a skillet over medium-high heat. Fry chicken for about 4 minutes on each side until golden brown and cooked through.
  5. While frying, mix ketchup and Worcestershire sauce in a bowl for the sauce.
  6. Once cooked, let chicken rest on paper towels, then slice it into strips. Serve over rice, drizzle with sauce, and garnish as desired.
