  • 1 can (13.5 oz) full-fat coconut milk
  • 1 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 2 tbsp curry powder
  • 2 cups spinach or kale (chopped)
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by peeling and cubing the pumpkin, chopping the onion, mincing the garlic, and grating the ginger.
  2. In a large pot over medium heat, add vegetable oil. Once hot, sauté onions until translucent (about 5 minutes). Add garlic and ginger; cook for another minute.
  3. Stir in cubed pumpkin and curry powder; cook for 5 minutes until slightly softened.
  4. Pour in coconut milk, scraping up any bits from the bottom of the pot. Bring to a gentle simmer for 15 minutes until pumpkin is tender.
  5. Add chopped spinach or kale during the last 3 minutes of cooking until wilted and bright green.
  6. Season with salt and pepper to taste. Serve hot over rice or with warm naan bread.
