  • 1 yellow bell pepper, chopped
  • 1 medium zucchini, sliced into rounds

  • 1/4 cup balsamic vinegar
  • 1/4 cup raw honey
  • 2 tsp Dijon mustard
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a large baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a bowl, combine bell peppers, zucchini, and red onion. Toss with olive oil, salt, and pepper.
  4. In another bowl, whisk together balsamic vinegar, honey, and Dijon mustard until smooth.
  5. Place chicken in the baking dish and arrange the vegetables around it. Drizzle with the sauce.
  6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C) and veggies are tender-crisp.
