Instructions

  1. Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions (approximately 20 minutes). Allow to cool slightly and season with rice vinegar.
  2. While the rice cools, slice the avocado, cucumber, and carrot into thin strips.
  3. On a bamboo sushi mat, place nori shiny side down. Wet your hands to prevent sticking, then spread an even layer of sushi rice on the nori while leaving an inch at the top.
  4. Layer the avocado, cucumber, and carrot in the center of the rice.
  5. Roll tightly using the bamboo mat, sealing the edge with a bit of water.
