  • 4 tbsp unsalted butter, melted
  • Zest and juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick spray.
  2. Rinse and pat dry the Cornish game hens, then season them inside and out with salt and pepper.
  3. In a mixing bowl, combine thyme, rosemary, parsley, garlic, melted butter, lemon zest, salt, and pepper to create the herb stuffing.
  4. Carefully lift the skin of each hen and stuff half of the herb mixture underneath; fill the cavity with any remaining stuffing.
  5. Place the hens breast-side up in the prepared baking dish and roast for 45-55 minutes or until they reach an internal temperature of 165°F (75°C) and have golden brown skin.
  6. Allow resting for five minutes before carving and serving.
