  • 1 package (16 oz) phyllo dough

  • 2 large eggs
  • 2 tbsp fresh dill, chopped (or 2 tsp dried)
  • 2 tbsp fresh parsley, chopped (or 2 tsp dried)
  • 4 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. In a skillet over medium heat, sauté the chopped onion in olive oil until translucent (about 5 minutes).
  3. Add the spinach, salt, and pepper; cook until wilted (3-4 minutes). Let cool slightly.
  4. In a bowl, mix the cooled spinach mixture with feta cheese, eggs, dill, and parsley.
  5. Layer phyllo dough in the baking dish (5-6 sheets brushed with olive oil), then add the spinach filling evenly.
  6. Top with more phyllo sheets (5-6), brushing each layer with olive oil.
  7. Bake for 30-35 minutes until golden brown. Allow to cool slightly before slicing.
