  • 3 cups vegetable broth
  • 1 cup sharp white cheddar cheese, shredded
  • 2 cloves fresh garlic, minced
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine Arborio rice and vegetable broth over medium heat. Stir continuously until creamy and al dente, about 18 minutes.
  2. Remove from heat and fold in minced garlic and shredded cheddar until melted.
  3. Spread the mixture onto a baking sheet to cool completely, then refrigerate until firm.
  4. Once chilled, shape the rice mixture into golf ball-sized spheres, placing extra cheese inside each ball if desired.
  5. Dip each ball in beaten eggs, then roll in panko breadcrumbs until fully coated.
  6. Fry in hot oil (350°F) until golden brown or bake at 400°F until crispy.
  7. Serve with marinara sauce for dipping.
