  • 12 mini tortillas (or sturdy tortilla chips)
  • 1 lb ground beef
  • 1 cup enchilada sauce (red or green)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro (for garnish)
  • 1/2 cup sour cream (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly spray a muffin tin with cooking oil. Press mini tortillas into each muffin cup to form cups.
  3. In a skillet over medium heat, cook ground beef until browned. Drain excess fat and stir in half of the enchilada sauce.
  4. Fill each tortilla cup with the meat mixture and top with shredded cheese and olives if using.
  5. Bake for 15-20 minutes until cheese is bubbly and golden brown.
  6. Let cool slightly, then garnish with cilantro and serve hot with sour cream.
