  • 2 tbsp olive oil or butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil or butter and sauté onions and bell peppers until translucent.
  3. Wash and dice potatoes into small cubes; add to the skillet until golden brown.
  4. In a large bowl, whisk together eggs and milk; stir in vegetables, potatoes, salt, and pepper.
  5. Grease a baking dish; pour half of the egg mixture, sprinkle half of the cheese, layer remaining egg mixture followed by more cheese.
  6. Bake for 45-50 minutes until golden brown; a toothpick inserted should come out clean.
