  • 1 package (17.3 oz) puff pastry sheets

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out puff pastry sheets on a lightly floured surface and cut into squares that fit your mini muffin tin.
  3. In a large bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, cinnamon, nutmeg, ginger, and vanilla until smooth.
  4. Place each puff pastry square into the mini muffin tin slots and fill each with the pumpkin mixture until just full.
  5. Bake for 20-25 minutes or until the filling is set and edges are golden brown.
