- 4 boneless, skinless chicken breasts (1.5 lbs)
- 2 cups long-grain rice
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 4 cloves fresh garlic (minced)
- 2 tsp dried Italian herbs
- Salt and pepper to taste
- 2 tbsp olive oil
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper and sauté until golden brown, about 5 minutes per side. Remove from pot.
- Add minced garlic to the pot and sauté until fragrant (about 1 minute). Scrape up any browned bits for added flavor.
- Stir in long-grain rice and dried herbs for about 2 minutes until the rice is lightly toasted.
- Pour in chicken broth while stirring continuously. Bring to a boil, then reduce heat to low and nestle the chicken back in the pot. Cover and simmer for about 20 minutes until rice is tender.
- Remove lid and stir in heavy cream and Parmesan cheese until well combined. Serve immediately, garnished with extra cheese or fresh herbs if desired.
