  • 4 cloves garlic, whole and unpeeled

Instructions

  1. Preheat oven to 400°F (200°C). Wrap garlic cloves in foil with a drizzle of olive oil and roast for 20-25 minutes until golden.
  2. Steam cauliflower florets in about an inch of water over medium heat until tender, about 10-15 minutes.
  3. In a blender or food processor, combine steamed cauliflower, roasted garlic (squeeze out of the skins), butter, heavy cream, salt, and pepper. Blend until smooth.
