  • 12 jumbo pasta shells
  • 2 cups shredded boneless, skinless chicken breasts (cooked)
  • 8 oz cream cheese (softened)
  • 1/2 cup buffalo sauce (your favorite brand)
  • 1 cup shredded cheddar cheese (divided)
  • Salt & pepper to taste
  • 2 green onions (chopped for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Cook the jumbo pasta shells in salted boiling water until al dente; drain and set aside.
  3. In a large bowl, mix shredded chicken, cream cheese, half of the cheddar cheese, buffalo sauce, salt, and pepper until well combined.
  4. Stuff each pasta shell with about two tablespoons of the buffalo chicken mixture and place them open side up in the prepared dish.
  5. Pour any remaining buffalo sauce over the stuffed shells and top with the remaining cheddar cheese.
  6. Cover with foil and bake for 25 minutes; uncover and bake for an additional 10 minutes until bubbly and golden.
