Cornbread is a warm and inviting comfort food that transforms any meal into a celebration.   • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup milk (or buttermilk)
  • 2 large eggs
  • 1/4 cup melted butter

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish or cast iron skillet.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, sugar, and salt.
  3. In another bowl, mix milk, eggs, and melted butter until smooth. Optionally add jalapeños or cheese for flavor.
  4. Combine wet and dry ingredients, stirring just until mixed (lumps are okay).
  5. Pour batter into the prepared dish and bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  6. Let cool slightly before slicing and serve warm with butter.
