  • 1/2 cup pure maple syrup
  • 1/4 cup extra virgin olive oil
  • 6 garlic cloves, minced
  • Zest of 1 lemon
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 3 tbsp fresh rosemary, chopped
  • 3 tbsp fresh thyme, chopped
  • 3 tbsp fresh sage, chopped
  • 4 carrots, chopped
  • 2 onions, quartered

Instructions

  1. Preheat oven to 325°F (165°C). Prepare a roasting pan with a rack.
  2. In a bowl, mix maple syrup, olive oil, garlic, lemon zest, salt, pepper, and herbs to create the herb mixture.
  3. Pat the turkey dry and rub half of the herb mixture under the skin and all over the exterior.
  4. Place turkey on the rack in the roasting pan. Add broth or water to keep it moist.
  5. Roast for 13-15 minutes per pound until internal temperature reaches 165°F (75°C), basting every 30 minutes.
  6. Let rest for at least 20 minutes before carving.
