  • 1 egg yolk
  • 1/2 cup finely chopped hazelnuts
  • 1/4 cup heavy cream (for ganache)
  • 1/2 cup semi-sweet chocolate chips (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, and a pinch of salt until combined.
  3. In another bowl, beat the butter and sugar until light and fluffy. Mix in the egg yolk until well incorporated.
  4. Gradually add the dry mixture to form a soft dough.
  5. Scoop tablespoon-sized portions of dough, roll into balls, and place on prepared baking sheets.
  6. Use your thumb to create an indentation in each ball. Bake for 10-12 minutes until set around the edges.
  7. While cooling, prepare ganache by melting heavy cream with chocolate chips until smooth. Once cookies have cooled, fill each thumbprint with ganache.
