Chicken Cordon Bleu is an exquisite dish that combines tender chicken breasts filled with savory ham and melted Swiss cheese, all enveloped in a crispy breadcrumb coating.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 slices thinly sliced ham (about 8 oz)
  • 8 slices Swiss cheese (about 8 oz)
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1 cup all-purpose flour
  • 2 tsp Dijon mustard
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Place each chicken breast between plastic wrap and pound to about half an inch thick.
  3. Layer ham and cheese on each chicken breast, then roll tightly and secure with toothpicks.
  4. Set up three shallow dishes: one with seasoned flour, one with beaten eggs, and one with panko breadcrumbs. Dredge each roll in flour, dip in eggs, then coat in breadcrumbs.
  5. Place the rolls seam-side down in the baking dish, drizzle with olive oil, and bake for 25-30 minutes until golden brown.
  6. Remove toothpicks before serving and drizzle with Dijon mustard.
