  • 2 cups cooked and shredded boneless skinless chicken breasts
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach (optional)
  • 1 tsp garlic powder

Instructions

  1. Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment paper.
  2. In a bowl, mix shredded chicken, ricotta cheese, half of the mozzarella cheese, garlic powder, and spinach until well combined.
  3. Spread about 2 tablespoons of Alfredo sauce on each noodle. Place a scoop of filling at one end and roll tightly.
  4. Preheat oven to 375°F (190°C). Spray a baking dish with nonstick spray and spread some Alfredo sauce on the bottom. Arrange rolls seam-side down in the dish.
  5. Pour remaining Alfredo sauce over the rolls and sprinkle with remaining mozzarella and Parmesan cheese.
  6. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10 minutes until bubbly and golden.
